Chocolate Chia Seed Cookies



Today on my recipe post we are talking about cookies. I mean really, who doesn’t like cookies. I don’t I know a person that would say no to a cookie, especially one that is super soft in the centre and that can be dipped into a coffee. OMG heaven. Even speaking about cookies is making me want to eat one now.

The problem with cookies is that they really aren’t great for the waistline. Obviously everything in moderation is great but if you are like me and could eat a cookie a day then this is maybe the kind of cookie you should be eating, not the sugar loaded alternatives they serve in Starbucks. I found this recipe on Deliciously Ella’s blog and I have been hooked ever since.

How to Make It

So first of all you need to start by popping a cup of Almonds and a cup of Hazelnuts into a blender and blend until a flour like power is formed. Once the flour has been formed throw the remaining ingredients into the blender and blend until a thick dough forms. With your hands, roll a tablespoon serving of dough into a ball and place on a sheet of baking powder. With a flat spatula (I put water on mine so the mixture didn’t stick) squash the ball to create a small circular cookie. Repeat this process until you run out of mixture. Your cookies are now ready to be baked so load them into a pre-heated oven set at 180 for approximately 20 minutes. Leave to cool before eating and enjoy with a big mug of coffee..I guarantee they are every bit as satisfying as the bad ones!!

What You Need

 1 cup of Almonds

1 cup of Hazelnuts

1 cup of Quinoa Flour

1/3 of a cup of Maple Syrup

1/4 of a cup of Dates

1/4 of a cup of Water

3 tablespoons of Raw Cacao

3 tablespoons of chia seeds

2 tablespoons of coconut oil
